Introduction: One Pan Creamy Spinach and Artichoke Salmon

One Pan Creamy Spinach and Artichoke Salmon is the quick and easy dinner for busy weeknights, yet also fancy enough for company! The creamy garlic Parmesan sauce is reminiscent of spinach and artichoke dip, with the addition of heart healthy salmon! And the best part is that it's all made in one skillet in 30 minutes, so dinner is on the table fast and clean up is easy!

Gather and prep ingredients for this 4-serving recipe.

You will need:

  • 3 tablespoons olive oil
  • 4 (4 oz.) salmon fillets, skin removed
  • Salt and pepper
  • ½ teaspoon paprika
  • 3汤匙黄油
  • 1/3 cup chopped onion
  • 1 cup heavy cream
  • 2 ounces cream cheese, softened
  • ¾ teaspoon garlic powder
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 1 (14 oz.) can artichokes, drained and roughly chopped
  • Additional grated Parmesan for garnish
  • Large skillet with high sides and cover

Prep ingredients: Chop and measure onion. Grate and measure Parmesan cheese. Drain and coarsely chop artichokes. Set all aside.

Step 2: Season and Sear Salmon

Season salmon fillets with salt, pepper and paprika. Add salmon fillets to oil in pan and cook 2-3 minutes, until salmon is lightly browned. Carefully turn fillets over and continue cooking 2-3 minutes longer, until salmon is cooked through. Remove salmon fillets from pan and set aside.

Step 3: Cook Onions

Add grated Parmesan, spinach and chopped artichokes. Cook 3-4 minutes, stirring often, until spinach is wilted.

Return salmon fillets to pan. Cover and cook over medium low heat 2-3 minutes, until salmon is heated through.

You could definitely substitute frozen spinach! Just thaw it and squeeze out the excess water before adding it to the skillet.

I too love salmon and spinach and I love artichokes, ate one yesterday. But I really love the idea of substituting asparagus for the artichoke. I don't cook meals really, but this Instructable has inspired me to begin. Can't get the image of the finished dish out of my head. Must make - mmmmmmm, salmon (as drool trickles down my COVID beard...)

Use Greek yoghurt and sour cream. Leave out the Parmesan except as a topping. Leave out the cream cheese, substitute with a much smaller amount of cheddar. Use beet leaves or chard instead of spinach.
