Introduction: Gross Spider Eggs Boba Pudding

This is a recipe for a coconut custard with taro flavoured tapioca pearls. It's simple, fast and uses basic ingredients (if you consider boba pearls 'basic ingredient', which I do)

Taro is a bit of a weird flavour, to me it tastes like a nutty coconut, but others also said that they tasted vanilla and/or sweet potato. Either way, it's delicious, especially in the form of tapioca pearlsandit goes well with coconut.

I used coconut milk because I'm lactose intolerant, but you can easily substitute it with regular, whole milk. Taro tapioca pearls can be substituted with black boba, or if you don't mind dying them, use other, non-black pearls- there are many flavours on the market whose days- lychee, green tea, original and coloured tapioca.

Supplies:

For 2-3 servings:

1 can (400ml) coconut milk

2 egg yolks

1tbs corn starch

1/4 cup sugar

Step 1: Egg Mixture

Beat 2 egg yolks with 1/4 cup of sugar. Add 1 TBS corn starch and beat until smooth.

Step 2: Custard

Open a can of coconut milk, pour it into a saucepan and begin heating it (do it while preparing the egg mixture). Once the milk is hot, pour 1/2 cup of milk into your egg mixture while whisking continuously. Slowly pour the leftover milk into the egg egg mixture and whisk it until smooth. Transfer the liquid into the pan and bring it to a boil. Keep stirring until custard cooks (around 2 minutes).

Step 3: Colouring

添加食用染料。目的是使custard lime coloured. Depending on your food dyes you will have to use just green or green and yellow.

Once the custard is dyed, transfer it into a bowl and cover the top with a cling film and leave to cool. You can serve it warm or cold, so it's really up to you how long to cool it for.

Step 4: Instant Tapioca Pearls

Taro tapioca is my favourite flavour and it has a fun colour too. However, I discovered that some batches are more vivid purple than others. It was important to make those pearls as purple as possible, so I cooked those pearls in water mixed with a bit of purple food dye.

Cooking instructions are on the packet, but it's not difficult. Simply boil 2 cups of water with enough dye to create dark purple liquid, add 1/2 cup of tapioca and cook for 2-3 minutes. Once the pearls are ready they will float to the surface. At this point you can fish one ball out and test if it's cooked. Once cooked, drain and rinse with cold water.
Mix them in with the custard.

Step 5: Optional Gummy Decoration

I bought that huge (3inches long) spider gummy, but it wasn't Halloween-y enough for my liking. I painted it with a black gel food dye. It dried within 2 hours and I was able to dust it with edible lustre dust to give it some definition.

Step 6: All Done
