Introduction: Easy Stuffed Chicken Breasts With Potatoes and Mushroom Gravy

我很确定we all have our favorite ways of preparing them and I would like to show you one of mine.Chicken breasts are very lean, so the flavor isn't that intense.That's why adding somestuffingcan really enhance the flavors and turn a boring breast into something more exciting :)

There are so many options, when choosing the stuffing ingredients,your fantasy is the only limit,so to speak. I decided to go with羊皮和奶油芝士，晒干番茄，菠菜，马苏里拉和培根. For the side, I chosesimple oven baked potatoesandcreamy mushroom sauce.
So let's dive into the recipe, shall we? :)
Step 1: For the Visual Learners, Here Is a Video of the Whole Process.
Step 2: The Ingredients You Will Need.
Nothing out of the ordinary, I'm pretty sure you have all of these at home.
4 chicken breasts
1 cup of baby spinach
4 slices of mozzarella
4 slices of bacon
100g (3.5oz) Feta cheese
100g (3.5oz) cream cheese
3 tablespoons diced sun dried tomatoes
salt to taste
Step 3: Prepare the Stuffing.
Start by slicing the spinach leaves. Then mix them with the cheeses and sun dried tomatoes. Dice the tomatoes into small pieces. Do not add salt as Feta is usually salty, add a bit of pepper if you want.
Step 4: Cut a Pocket Into the Breasts.
This part can be a bit tricky. Make sure you don't cut all the way through, one side of the breast has to remain in tact. Use a small and sharp knife.
Step 5: Season the Breasts.
Season each breasts with salt and pepper. Both the outside and the inside. Add a bit of olive oil and give it a nice massage to distribute seasonings evenly.
Step 6: Fill the Pockets With the Stuffing.
Now it's time to stuff the breasts. Start by adding a slice of mozzarella, then add bacon and then 2-3 teaspoons of the delicious stuffing mix. Use the spoon to push the stuffing inside as deep as possible.
TIP: Try to get really large breasts, the bigger the better. I wasn't lucky when shopping to day, so I had to settle with quite small ones. As a result, quite a bit of the stuffing leaked. This isn't a bad thing though. As you will see on the following pics, lots of tasty sauce formed in the baking dish and that would work very well with rice as a side :)
Step 7: Time to Bake.
Place the stuffed breasts into a deep baking dish, cover with foil and bake in the oven at 200C (400F) for about 20 minutes.
Step 8: Remove Foil and Keep Baking.
20 minutes later, the breasts are almost cooked through. Now remove the foil and keep baking some more. The goal is to reach a golden brown color on the top. It toook an additional 15-20 minutes in my case.
Keep in mind that the last thing you want to do is dry the meat out, so do not push the limits.
Step 9: Breasts Are Done.
The color looks great, we are done. Pour some of the sauce over the breasts and move them to a plate.
Step 10: Add the Sides and Serve
The final step is to plate :) I used baked potatoes and a delicious mushroom gravy that really goes well with this dish. Enjoy.
